Our Mexican beans come to us from Cooperativa de producción Tzeltal-Tzotzil, a group of family owned farms operating in 26 indigenous communities North of San Cristobal De Las Casas.

In Chiapas, we have worked for years with local communities on education, health and providing opportunity for victims of the Death Train. At the request of PROISCH we have been organizing and funding advanced organic technical trainings that create improved soil and coffee quality. As a result of this continuing program, high end coffee buyers have been paying premiums for this fantastic coffee (but you can get it for a lot less from us!)

There are several coffee regions in Mexico and each has slightly different characteristics, but by and large you can count on Mexican coffee to be smooth and round in the mouth, medium acidity, not too bold, whether they come from Chiapas (nutty and sometimes slightly spicy), Vera Cruz (slight cocoa taste), or Oaxaca (almond flavors). The large, smooth beans have excellent aroma, medium body and slight acidity. A mellow coffee with a softly sweet flavor.


Bokashi Compost (2013 - ongoing)

  • Education and support to stop the spread of la roya (coffee leaf rust)

favorite dean's beans everrr

I've tried most of Dean's Beans coffees since I was first turned onto it over a well over a decade ago. Older favorites included Ring of Fire, Roadhouse Blend, and Timor Atsabe. Nothing compares to French Roast Mexican Chiapas. It's beautifully smooth with no bitterness. I was into the classic version of Mexican Chiapas for a while and that does have a more distinctive cinnamon undertone. Then I decided to try the M.C. French Roast w lower acidity and slightly less caffeine, which meant I could indulge in 2 full cups a day. It's seriously so soothing and delicious... it's pure love. I grind daily and use an Italian-style percolator made by Grosche. I am hooked. I enjoy it black and sometimes with frothed oat milk. I used to put ginger powder and cinnamon on my cappo-styled coffee but not anymore. It holds up on its own ... beyond the beyond. You guys rock! Thank you!

Love this coffee. Strong, full bodied but not bitter

Because it is dark roast ( the longer beans are roasted the oil comes to the surface of the beans).I buy beans rather than ground. They would eventually gum up my Cuisinart Grind and Brew. Solution: invested in a coffee grinder. This way you get fresh ground beans for your coffee and avoid the clogging of your grinder coffee pot.

Highly recommend

Our new favorite! Smooth taste, low acid, and so darned good. We grind our own coffee beans in small batches, and have had fun trying out a variety of medium to dark roast coffee. While they are all good, the taste and smoothness of this blend keeps us coming back for more. It's so nice to have a wonderful tasting coffee that's good morning, noon, and night!

Subtly unique potent flavorful

This is a delicious bean for those who like rich, not too acidic, chocolate loveliness that snuggles from the inside (are these proper coffee bean review terms?). Also a rounded out buzz. Mahalo!
